Cinco de Mayo in Life Skills Class

 Last Friday, the Life Skills class prepared several Mexican-style desserts to celebrate Cinco de Mayo.  One was a delicious cream-filled pastry, called Sopaipilla Quesitos.  Another was an apple-filled pastry made in tortillas served with vanilla ice cream and caramel sauce.  The most unique recipe was Mini Churro Taco Boats, tortillas filled with Greek yogurt and fresh fruit.  Students and staff alike greatly enjoyed the treats!  Click on the links to check out the recipes and try these out at home!
